Lime~Cilantro Pork Tacos

If there is one thing we love to eat in this house, it is Mexican food. This recipe is so good that it contends with restaurants and authentic Mexican food. I wish I could say I created it, but I clipped it out of a Cooking Light magazine years ago and have tweaked it just a little by adding beans, cheese, and avocado. I hope you will enjoy it as much as we have. It goes really well with a salted frosty mug and your favorite Mexican beer. Enjoy!


What you will need:
1 lb pork tenderloin cut into thin strips
1/4 tsp salt
Freshly ground pepper to taste
2 tsp olive oil
1.5 cups thinly sliced onion
1 jalapeno pepper, seeded and chopped
1/2 cup chicken broth
2-3 chopped plum tomatoes
3 Tbsps chopped cilantro
The juice of one lime
Soft taco or corn tortillas
a can of blackbeans warmed and seasoned
1 avocado sliced
1/2 cup grated pepper jack cheese

1. Sprinkle the pork with the salt and pepper. Heat the oil and add pork to the pan and sauté 4 minutes or until browned. Remove the pork from the pan and place in a bowl. Keep warm.

2. Add the onion and jalapeno to the pan and let sauté 5 min or until the onion is tender.

3. Add the broth and reduce heat. Simmer for 1 minute then stir in the tomato and simmer for 2 more minutes.

4. Return the pork and juices to the pan. Stir in cilantro and lime juice. Cook for another minute or until the pork is thoroughly cooked.

5. Heat tortillas and spoon some beans and the desired amount of pork mixture into tortilla, top with cheese and avocado.

6. Expect to over eat!
