First Day of Fall

With yesterday being the first day fall we had to try our best to trick ourselves into thinking it is fall.
   The K buddies and Hank started the morning out making fall themed crafts while Hailey was at a slumber party.
 By the middle of the day it was 107, so we had to swim.  The pool is getting pretty chili with the overnight lows getting in the mid 70s.  It seems the first day of fall maybe the signal that weekends poolside are about to be over.
We made chili for dinner and put in this adorable pumpkin pot.
Hank and Kaitlin helped me make Eggless Pumpkin Muffins.  The house smelled of all those yummy fall spices.  While it didn't feel like fall, we tried to smell, taste and see fall as much as we could.  In case you need an excuse to bring fall to your house, here is the recipe.

Eggless Pumpkin Muffins
Ingredients
1 can pumpkin
1 cup sugar
2 Tbsp plain yogurt
4 Tbsp melted butter
1 and 1/2 cup flour
1/4tsp salt
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground allspice
1/8 tsp cloves
1/4 milk
1tsp vanilla extract

Preheat oven to 375 degrees.  In mixing bowl combine the pumpkin, sugar, yogurt and butter in a large mixing bowl.  In a separate bowl combine the flour through cloves and then add to the pumpkin mixture until combined.  Add the milk and vanilla and mix well.  At this point you can fold in 1/2 cup of chocolate chips, dried cranberries, raisins or chopped walnuts.  We left ours plain.

Fill muffin cups 2/3s full and bake for 18-20 minutes.  Makes about 18 muffins.  Enjoy this fall treat!

Is it any cooler at least there?? I hope so for your sake! We are still in the 90's by the afternoon...but the mornings are beautiful--70's. I laugh though because people wear long sleeves in the morning...it's not THAT cold. Ha! I miss you! HOpe you are all doing well!!
